Podere Sapaio 2021: the most complete wine of the day

There is a biodynamic theory that wine tastes closed and grippy on a root day. I tasted Podere Sapaio 2021 on exactly such a day, and it fizzed with energy. That says enough. Of the eight wines at La Grande Bellezza in Amsterdam, this was for me the most complete.

Podere Sapaio 2021 in brief

Sapaio is the house flagship, a Bordeaux blend of mostly Cabernet Sauvignon with Petit Verdot and Cabernet Franc. The wine carries the Toscana IGT because since 2015 it has included fruit from Bibbona, just outside the Bolgheri DOC. From the 2023 vintage on, Sapaio comes entirely from Bibbona. The vines stand on double spur-pruned cordon, closely spaced at 7,500 plants per hectare. Fermentation happens in stainless steel at controlled temperature with long maceration, followed by malolactic conversion in barriques and 18 months in French oak barriques.

Tasting Note

Appearance

Deep and dense, with a youthful core.

Nose

Energetic and layered. Cigar box, mushroom, cherries, clove and vanilla, with a whisper of scorched wood and coconut. Everything builds calmly, and then balsamic and tomato leaf join in. Pure and clean.

Palate

Beautiful acids, high but elegant, and tannins that are complex and taut in structure. Black pepper and juniper. Clean, gastronomic and crisp, a wine that makes you happy and energetic.

Finish

Long and clean, with the acids carrying the minerality onward.

Quality

The most complete wine of the day. Layered, gastronomic and energetic, with a purity that fits careful work; the wine is certified organic.

Two honest caveats, because even a top wine deserves a critical eye. First, the youth: better to open it from 2027. All the building blocks are there, but the complex tannins still need time to fully fuse. Second, the level: this is the flagship, with the price and the expectation that come with it. The wine lives up to that expectation, but it is an investment, not an everyday bottle.

Drink or keep? Keep, gladly. If you open it now, do it at the table and with some air. But the real magic is in the years to come.
