Pot still
Copper batch-distillation vessel with a swan-neck top; preserves more congeners and flavour than continuous distillation, with lower yield.
A copper kettle with a wide belly and a tapered swan-neck on top. That simple shape contains the whole logic of pot-still distillation. One charge in, heat, capture vapour, cool, distillate out. Then empty and start again. No continuous process, no scale economy. What you get instead: maximum contact between vapour and copper, and preservation of flavour compounds that vanish in continuous systems.
How it works
Single malt Scotch and Irish whiskey distil two or three times in pot stills. Cognac follows the alembic charentais protocol: two consecutive distillations (première chauffe and bonne chauffe). Rhum agricole from Martinique uses comparable alembics. Mezcal works with smaller clay or copper pots. The shared logic: a batch process handling a few hundred to several thousand litres per run, not the tens of thousands of a continuous system.
The spirit leaves the pot at relatively low abv (70-72% for cognac, 65-70% for Scottish double distillation). Lower than column distillation, and that’s the entire point. At lower abv, congeners, esters, higher alcohols, aldehydes, sulphur compounds, phenolics, stay in the liquid. Those congeners carry flavour: fruit, spice, smoke, salinity. The purer you distil, the flatter the result.
The critical point
Pot still gets sold as a quality marker. The reality: mediocre pot-still distillation does not automatically beat well-executed column distillation. Bourbons from column stills (Buffalo Trace, Wild Turkey, Four Roses) can deliver exceptional intensity. At the same time, average pot-still distilleries produce average whisky.
What pot stills do anchor is flavour identity. The copper vessel works as a chemical reactor: copper binds sulphur compounds that would otherwise give rubbery aromas, and the kettle shape determines how returning vapour (reflux) recondenses. Glenmorangie is known for extra-tall necks that increase reflux and produce a lighter spirit. Bushmills uses triple distillation for added softness. Hennessy’s alembic charentais has shaped cognac style since 1765.
For the drinker
Pot still suggests character but does not guarantee it. Read the label for “double distilled” (standard Scotch) or “Single Pot Still Irish Whiskey” (Irish-specific designation for mixed malted-and-unmalted barley). Both count toward flavour identity. Neither tells you how long the spirit sat in cask or which casks shaped it.
The copper element
Copper is not an arbitrary material choice but chemically essential. During distillation, sulphur compounds from yeast activity react with the copper metal to form copper sulphides that bind to the vessel walls. Without that reaction, the distillate would smell of rubber, char, or rotten eggs. Stainless-steel pot stills technically exist but always produce inferior distillate unless followed by secondary copper purification. That’s why no top producer works in stainless steel: it’s a chemical floor.
Vessel shape and its effect
The shape of a pot still determines reflux. A short, wide vessel lets vapour rise quickly to the lyne arm: low reflux, full distillate (Macallan, Glenfarclas). A tall narrow neck forces vapour to condense and re-evaporate multiple times: high reflux, lighter distillate (Glenmorangie has the tallest stills in Scotland at 5.14 metres). When a distillery expands, it copies the original vessel shape exactly, including dents and curves, because the geometry defines house style. Not a subtle setting, but permanent engineering.
For the drinker
To learn pot-still character: compare Glenmorangie 10 (high reflux, light) with Macallan 12 Double Cask (low reflux, full) blind. The gap isn’t quality but two different distillation philosophies. For cognac: a Frapin Grande Champagne VSOP shows the alembic charentais style. For rum: Foursquare Doorly’s 12 Year from Barbados uses traditional pot-still technique for characterful rum. The method is the same everywhere; the result varies widely.
