Column still

Continuous distillation tower with stacked plates; produces very high abv in a single run and enabled the mass production of neutral alcohol and light spirits.

In 1830 the Irish excise officer Aeneas Coffey patented a tower that changed distilling for good. Two stacked columns, steam rising, wash descending, a network of plates between them, and in one continuous process out comes 95% abv ethanol. No more batches, no pauses, no refilling. The distillery became a factory.

How it works

A column still is a vertical tower with stacked perforated plates or bubble caps. The liquid to be distilled (wash or must) enters at the top. Steam rises from the bottom. On each plate, part of the vapour condenses; the heavy fraction drops down, the light fraction rises further. Upward through the column the distillate becomes purer in ethanol and lighter in congeners. The final product is drawn off near the top at the desired abv fraction.

Continuous means exactly that: as long as you feed input and supply steam, distillate flows out. A column still can run for days or weeks without interruption. Yield is a multiple of pot still, for grain whisky, vodka, gin base spirit, and light rum, this is the standard.

The critical point

Column still is not automatically synonymous with “industrial” or “flavourless”. The pot-vs-column comparison as a quality opposition simply doesn’t hold. Bourbons are typically distilled through a column followed by a doubler (a modified pot for the second pass) and deliver intense, character-driven whiskeys. Buffalo Trace, Wild Turkey 101 and Four Roses Single Barrel are all column-distilled and seriously deep.

What does matter is how high you distil. Multi-column systems (four or five columns) produce neutral alcohol at 95-96% abv for vodka and gin base. A single column with partial reflux stays around 70-80% abv and retains character. The Martinique Rhum Agricole AOC, for example, caps distillation at 71-72% abv specifically to preserve sugarcane character. That’s column technique with expressive output.

What it made possible

Without the column still, vodka, London Dry gin, Tennessee whiskey, light rum, white rum and cachaça don’t exist as categories. The technology enabled scale economics and with that an entire class of spirits that would otherwise be too expensive to produce. For the drinker, that is no reason to distrust the technique, but a reason to know where in the column a spirit gets drawn off. High = neutral and soft. Low = characterful and complex.

Bourbon: column-plus-doubler

The American bourbon industry developed a hybrid approach that combines the best of both worlds. A continuous column still first distils to around 65% abv (lower than typical column work). The distillate then passes through a doubler, essentially a modified pot still, for a second pass up to 70-75%. The doubler acts as a copper reactor and refinement step. Buffalo Trace, Wild Turkey and Heaven Hill all use this method. The result: bourbon receives both the scale economics of column distillation and the flavour depth of pot. For the drinker that means the pot-versus-column debate is largely irrelevant in the bourbon context.

Three technical types

Coffey stills (original 1830 patent) use two stacked columns, analyser and rectifier, for relatively character-preserving distillation. Single column stills with partial reflux (the Caribbean standard for rum) produce distillate around 70-80% with sugarcane aromatics retained. Multi-column systems (4-5 columns, used for neutral ethanol production) deliver 95-96% abv where nearly all congeners are filtered out. For the drinker, multi-column matters most in the context of gin (base ethanol must be 96% for the London Dry category) and vodka (definitionally neutral, optimised for purity).

For the drinker

To explore column work yourself: try Buffalo Trace bourbon (hybrid column-doubler, full character) alongside Smirnoff vodka (multi-column, neutral). Both rely on column technique but produce opposing results. It is not a quality contest between pot and column, it is a choice about what the distillate should be. For wine lovers learning to understand spirits categories, this is the most clarifying lesson: technique is tooling, not goal.
