What makes this Dutch sparkling wine truly distinctive lies in its grape composition: 85% Souvignier Gris and 15% Johanniter. These aren’t your typical sparkling wine varieties, and frankly, that’s what makes them fascinating. Both are PIWI grapes—fungus-resistant varieties explicitly developed for cooler, damper climates like the Netherlands.

As Meta van den Boomen of Wijndomein Holset explains, “Souvignier Gris is a beautiful grape in the vineyard. It grows relatively easily and produces gorgeous colors when the grapes ripen.” The name gives it away—the grapes turn grey, purple, and pinkish as they mature, though the flesh remains white for white wine production. Johanniter, planted at Holset since 2009, is related to Riesling and shares its beautiful fresh acidity and crisp citrus-apple aromas.

However, working with these varieties presents real challenges. Unlike traditional sparkling varieties, PIWI grapes require different handling and careful blending to achieve the desired balance.

Sustainable Roots in Limburg’s Terroir

Domein Holset’s commitment to sustainability extends far beyond trendy marketing speak. Located at the very tip of the Netherlands near the Vaalserberg, the estate practices minimal intervention viticulture, working steadily toward full organic and eventually biodynamic certification with the Demeter seal.

“We want to work as naturally as possible,” Meta emphasizes. This approach isn’t just environmentally conscious—it’s practically necessary for PIWI varieties, which actually thrive under reduced chemical input thanks to their natural resistance to fungal diseases like mildew.

The terroir here differs dramatically from Champagne’s famous chalk soils. Limburg’s sandstone and marl layers create ideal conditions for maintaining the crucial acidity required for producing high-quality sparkling wine. Even German Sekt consultants have confirmed that Holset’s base wines are “technically perfectly suited for sparkling wines.”

Traditional Method Meets Modern Innovation

Winemaker Kirsten Abels employs the traditional method (méthode champenoise) but with contemporary twists that set this Dutch sparkling wine apart. The base wine undergoes a fascinating three-way split: 70% aged in stainless steel for purity, 20% in Burgundian oak for complexity, and 10% in ceramic vessels for texture.

Crucially, all base wines undergo complete malolactic fermentation during their ten months of tank aging before the second fermentation. As Meta explains, “This converts the sharper apple acids into softer lactic acids—think of going from sharp citrus to something more yogurt-like.” This process allows for the minimal 3g/l dosage while maintaining balance.

After 24 months on lees—matching many premium Champagnes—the wine qualifies as Extra Brut. However, Holset currently sends their wines to Germany for riddling and disgorgement, though they’re investing in their own equipment to complete the entire process in-house by 2026, allowing them to use the protected BGA Mergelland designation.
