Harvested early (late August to early September) to maintain freshness, the grapes undergo gentle pressing followed by traditional fermentation in stainless steel tanks.
The La Valentina difference? Extended aging on lees (dead yeast cells) for several months creates exceptional texture while preserving the wine’s remarkable purity.
