When you think of European sparkling wine, Champagne and Cava likely come to mind first. But have you ever considered Dutch bubbles? A quiet revolution is bubbling up from an unexpected corner: the Netherlands. Domein Holset’s newly released Novo 2022 represents more than just another sparkling wine\u2014it’s a bold statement that Dutch viniviticulture has truly arrived on the international stage.<\/p>\n

The Grape Pioneers Behind Dutch Sparkling Wine<\/h2>\n

What makes this Dutch sparkling wine truly distinctive lies in its grape composition: 85% Souvignier Gris and 15% Johanniter. These aren’t your typical sparkling wine varieties, and frankly, that’s what makes them fascinating. Both are PIWI grapes\u2014fungus-resistant varieties explicitly developed for cooler, damper climates like the Netherlands.<\/p>\n

As Meta van den Boomen of Wijndomein Holset explains, “Souvignier Gris is a beautiful grape in the vineyard. It grows relatively easily and produces gorgeous colors when the grapes ripen.” The name gives it away\u2014the grapes turn grey, purple, and pinkish as they mature, though the flesh remains white for white wine production. Johanniter, planted at Holset since 2009, is related to Riesling and shares its beautiful fresh acidity and crisp citrus-apple aromas.<\/p>\n

However, working with these varieties presents real challenges. Unlike traditional sparkling varieties, PIWI grapes require different handling and careful blending to achieve the desired balance.<\/p>\n

Sustainable Roots in Limburg’s Terroir<\/h2>\n

Domein Holset’s commitment to sustainability extends far beyond trendy marketing speak. Located at the very tip of the Netherlands near the Vaalserberg, the estate practices minimal intervention viticulture, working steadily toward full organic and eventually biodynamic certification with the Demeter seal.<\/p>\n

“We want to work as naturally as possible,” Meta emphasizes. This approach isn’t just environmentally conscious\u2014it’s practically necessary for PIWI varieties, which actually thrive under reduced chemical input thanks to their natural resistance to fungal diseases like mildew.<\/p>\n

The terroir here differs dramatically from Champagne’s famous chalk soils. Limburg’s sandstone and marl layers create ideal conditions for maintaining the crucial acidity required for producing high-quality sparkling wine. Even German Sekt consultants have confirmed that Holset’s base wines are “technically perfectly suited for sparkling wines.”<\/p>\n

Traditional Method Meets Modern Innovation<\/h2>\n

Winemaker Kirsten Abels employs the traditional method (m\u00e9thode champenoise) but with contemporary twists that set this Dutch sparkling wine apart. The base wine undergoes a fascinating three-way split: 70% aged in stainless steel for purity, 20% in Burgundian oak for complexity, and 10% in ceramic vessels for texture.<\/p>\n

Crucially, all base wines undergo complete malolactic fermentation during their ten months of tank aging before the second fermentation. As Meta explains, “This converts the sharper apple acids into softer lactic acids\u2014think of going from sharp citrus to something more yogurt-like.” This process allows for the minimal 3g\/l dosage while maintaining balance.<\/p>\n

After 24 months on lees\u2014matching many premium Champagnes\u2014the wine qualifies as Extra Brut. However, Holset currently sends their wines to Germany for riddling and disgorgement, though they’re investing in their own equipment to complete the entire process in-house by 2026, allowing them to use the protected BGA Mergelland designation.<\/p>\n

During our recent tasting for the “Sparks by VinoVonk” podcast, the Novo 2022 immediately impressed with its aromatic intensity\u2014unusual for sparkling wines, which tend to be more reserved. The nose delivers enticing aromas of wild peach and citrus zest, underscored by delicate spring blossom notes, with that characteristic brioche and toast development from extended lees aging.<\/p>\n

The palate shows crisp precision with flavors of fresh apple and citrus, supported by fine, persistent bubbles and a distinctly mineral-driven finish. Despite the Extra Brut designation, the wine maintains excellent balance, thanks to malolactic fermentation, and feels lively yet soft.<\/p>\n

The wine shines as an aperitif but truly excels with food. Meta suggests pairing it with fresh seafood, light salads, or even alongside a meal. However, its bold aromatic profile might overwhelm particularly delicate dishes.<\/p>\n

The Future is Sparkling<\/h2>\n

Novo 2022 proves that exceptional sparkling wine isn’t limited to traditional regions. As visitors from Belgium and Germany have noted, Holset’s wines “can now measure up to Champagne”\u2014high praise from experienced tasters in neighboring wine regions.<\/p>\n

Meta van den Boomen sees a bright future for Dutch sparkling wine: “There’s growing interest in local wines, especially in restaurants and by sommeliers who want to surprise guests with beautiful sparkling wine that’s different and from their own country.” This aligns perfectly with current culinary trends toward lighter, more refined cooking styles.<\/p>\n

As climate change continues to reshape European viticulture, regions like Limburg\u2014with their naturally high acidity and cool-climate advantages\u2014may well represent the future of high-quality sparkling wine production. This Dutch sparkling wine isn’t just a novelty\u2014it’s a compelling glimpse into that future.<\/p>\n
